Introduction
My Mom was famous for her wonderful divinity. I have fond memories of helping her make this every Christmas. It really isn't that hard to make but don't try it on a humid day or you will have a sticky mess. I have had failed batches that made great ice cream topping though! Store the finished candy in a wax paper lined air tight container.You can add chopped maraschino cherries to make a pretty pink divinity.
Ingredients

2 egg whites at room temperature
1/2 cup light corn_syrup
1/2 cup water
2 cups granulated_sugar
Pinch of salt
1 teaspoon vanilla_extract
1 cup chopped nuts (optional)

Directions
Step: 1

Line a large cookie sheet (or 2) with waxed paper or butter an 8 inch square pan, set aside.


Step: 2Place egge whites in large bowl of an electric mixer; set aside.
In a heavy 3 quart saucepan combine water, sugar, corn syrup and salt.Place pan over low heat and stir with a wooden spoon until sugar is dissolved.Remove spoon, increase heat to medium-high and cook without stirring until mixture reaches a rolling boil.
Step: 3Clip on a candy thermometer. Reduce heat to maintain a full( but not rolling) boil. If sugar crystals begin to form on sides of pan, wash down sides of pan with a wet pastry brush.Cook syrup  to 252F (125c) or hard ball stage. Just before syrup is ready, beat egg whites until stiff but not dry. Remove syrup from heat and allow bubbling to subside.
Step: 4With mixer on high speed, gradually pour hot syrup over egge whites, once you begin to pour do not stop and do not scrape bowl( this step may take 2 people, one to beat the egg whites and one to pour the syrup). Continue beating until mixture begins to loose it's gloss and holds it's shape. Add vanilla and nuts if desired.using 2 buttered spoons, drop candy quickly by spoonfuls onto waxed paper lined trays or pour into prepared pan, spreading evenly.Makes about 40 pieces or 64 1 inch squares.
