Savor the lush flavor of ripe summer berries in these delectable little clouds.
Ingredients

For the meringues:
2 large egg whites
1/4 cup granulated sugar
For the filling:
1 cup plus 2 Tbsp mascarpone_cheese
7 fl oz 8 per cent fat fromage frais
1 Tbsp granulated_sugar
1 tsp vanilla_extract
 
 For the topping:
1 lb of strawberries or raspberries or a mixture of raspberries ,strawberries or any combination you like.(reserve 1 cup berries for garnish)
Confectioners_sugar 
 

Directions
Step: 1You will need a 16 x 12 inch baking sheet lined with baking parchment.
 
Pre-heat oven to 300°F 
 
To make the meringues, place the egg whites in a large bowl and using an electric hand mixer on low speed, begin whipping. Continue for about 2 minutes, until the whites are foamy, then switch the speed to medium and continue whipping for 1 more minute. Now turn the speed to high and continue whipping until the egg whites reach the stiff peak stage. Slowly add the sugar while whipping the meringue on high speed, a little at a time, until you have a stiff and glossy mixture.
Step: 2

Spoon meringue mixture onto the prepared sheet in  8 even mounds, spacing them evenly. Using the back of a spoon or a small palette knife, hollow out the centers. Don't worry if they are not all the same shape. Place the sheet of meringues on the center shelf of the oven, immediately reduce the heat to 275°F and leave them for 30 minutes. At the end of the 30 minutes, turn the oven off and leave the meringues to dry out in the warmth of the oven until it is completely cold (usually about 4 hours) or overnight. The meringues will store well in an airtight container and they freeze extremely well.

Wash berries and remove stems on strawberries if using, and slice them. Leave all other berries whole.

Step: 3To assemble the meringues, whip the filling ingredients together with an electric mixer. Spoon equal amounts into each meringue and top with equal amounts of the berries. Crush a cupful of berries with a little powdered sugar and drizzle over the fresh berries.
