Baked Halibut With Potatoes

Introduction
Guido told me about this dish when he was here last summer. I tried it one day after he left when I found some wonderful fresh halibut at the market. What a wonderful meal it was! My daughter Erica loves fish cooked this way.
Ingredients

4 medium halibut fillets
8-10 Yukon Gold potatoes
Sea_Salt
Freshly ground black pepper
1 medium sprig fresh rosemary ( about 2 Tbs fresh leaves)
2 cloves garlic
Olive oil
1 dozen cherry_tomatoes
1 dozen gaeta_olives , pitted and chopped (black olives can be used as well)
White wine , a dry wine is best

Directions
Step: 1

Slice the potatos thinly and saute in olive oil for about 4 minutes or until slightly tender.
Layer potatos in a roasting pan. Sprinkle with sea salt and pepper. Lay halibut on top of potato's.Make a paste of the garlic and rosemary by mincing together to a very fine texture and spread over fish fillets. Arrange cherry tomato's and olives around the fish. Drizzle all with olive oil . Bake at 350F for 20 minutes or until the fish flakes easily. If the dish becomes to dry during baking add about 1/4 cup white wine to the pan.
