Almond Pound Cake

Introduction
Many new cooks are intimidated with cake baking, but it's actually very easy once you get the hang of it. This is a good cake to start with. I plan on making mini bundt cakes decorated with a simple glaze and sprinkled with chopped almonds to include on my goodie trays for Christmas gifts.
Ingredients



1 7 oz package almond_paste
1 cup granulated_sugar
1 cup (2 sticks) butter at room temp.
4 large eggs at room temp.
2 cups all_purpose_flour
1/8 tsp salt
1 tsp vanilla_extract
1 tsp baking_powder
1/2 cup milk




Directions
Step: 1Preheat the oven to 325 F. Grease and flour a 9x5 inch loaf pan or a bundt pan of egual size.
Grate the almond paste on the large hole side of a grater.
Using an electric mixer set on medium speed, beat almond paste, sugar and butter until well mixed and fluffy.

Step: 2Add eggs one at a time, beating well after each one. Beat on high until light and fluffy.

Sift the flour with the baking powder and salt .Add to the batter alternately with milk. Beat on low until just combined and smooth. Don’t over mix, or the cake will be tough.

Step: 3Pour batter into prepared pan. Bake for 75 minutes or until a toothpick inserted into center of cake comes out clean.

Step: 4Cool cake, still in pan, on wire rack for 5 minutes. Un-mold carefully and finish cooling on rack before cutting.
After completely cooled, wrap in plastic wrap or place in a airtight container. Cake will remain fresh for 3 days this way or one week if refrigerated. Cake may be frozen up to one month wrapped in plastic wrap and then foil.

this was great, very moist and soft. i dont know what almond paste is and couldnt find it in the shop so i used a teaspoon of almond extract instead. it was very flavourful.

Almond paste is sold in a brick or log, it's a dough made of ground almonds and sugar . I'm amazed that the cake came out so well without it.

I followed the directions to a T this time, with the almond paste. It turned out perfect, so light and fluffy. I took one to my mums with me and it was gone before any other dessert!
