Green Tomato Chutney

Introduction
Chutneys are wonderful with roasted meats. This one is particulary good with lamb.
Don't let the canning jar step scare you, it's actually very simple. The jars and lids are available in most supermarkets.

Ingredients

        
4 lb Green tomatoes
1 lb Apples
1 lb Onions
2 oz Salt
1 lb brown sugar
1 pt Malt vinegar
1 tsp Pumpkin pie spice
1 tsp mustard_powder
1 tsp ground ginger
1 tsp cayenne pepper
4 pint canning jars and 2 part seals
   

Directions
Step: 1

Finely chop the tomatoes, apples and onions. Place in a bowl,sprinkle with salt, cover and leave overnight. Next day, strain off the salt liquor. Place all the ingredients together in a large saucepan, bring to the boil and simmer for 1 to 2 hours, stirring occasionally, until the chutney is thick. While the chutney is cooking, wash jars, rings and lids in hot soapy water. Rinse well and place jars in a pot of cold water, bring to a boil and boil for 30 minutes. Place rings and lids in another smaller pan and bring to a boil. Boil 15 minutes. Hold jars and lids in hot water until chutney is done. When chutney is finished cooking, pour into hot jars , wipe edges and lip of jar and seal with lids, make sure lids are on tightly. Listen for the pop that indicates the jar has sealed. Store any that do not pop (the lid will be flexible in the center) in the fridge.
