Reuben Sandwiches

Introduction
These are a deli classic but their easy to make at home and so good.
Ingredients

Sandwiches:
8 slices rye bread
16 or more thin slices corned_beef
1 cup sauerkraut, well drained
4 slices swiss cheese
1 tsp caraway_seeds
1/2 cup Russian Dressing
1/4 cup soft butter .

Russian dressing
1 cup mayonnaise
1/2 cup ketchup
2 tsp. fresh lemon juice
1-1/2 tsp. sugar
1 tsp. grated onion
1/8 tsp. paprika
1/8 tsp. garlic_powder


In a small bowl, combine all ingredients until blended. Cover and chill.

Directions
Step: 1

Drain saurekraut in a mesh strainer, pressing down lightly to get out most of the juice. Place drained sauerkraut in a bowl and add caraway seed. Set aside. Prepare russian dressing or use a good quality bottled dressing.Lay out 4 slices of the rye bread. Spread russing dressing on bread and arrange corned beef on top. 

Step: 2Place a layer of the sauerkraut on the corned beef and add a slice of swiss cheese.Top with remaining slices of bread.Spread both sides of each sandwich with the soft butter. Place sandwiches in a heavy skillet or griddle and cook about 4 minutes on each side on medium heat or until bread is a toasty brown and cheese is melted. Remove sandwiches and cut in half to serve.
