Pesto Chicken Panini

Introduction

A panini machine makes these sandwiches really great but a skillet or grill will work almost as well. The pannini machine applies heat from both sides at once and heats up the inside of the sandwich nicely. Serve these with a nice pasta salad for a great lunch or dinner. I like to make these with small ciabatta breads, split lengthwise.

Ingredients

8 slices Italian bread
1/2 cup thick pesto (drain any extra oil off the top)
4 slices mozzerella_cheese
2 skinless boneless chicken breasts, grilled and split lengthwise (chicken should be hot)
1 jar roasted red peppers in oil, drained
Olive oil

 

Directions
Step: 1

Spread one side of each slice of bread with olive oil. Spread pesto one other side of each slice of bread. Lay a piece of roasted pepper over the pesto. Place one half of chicken breast over the pepper.Place a slice of mozzerella over the chicken. Top with remaining slices of bread, oil side up.
Place sandwiches on pannini grill and cook until bread is toasted on the outside and cheese  is slightly melted.
