Introduction
Dutch Baby pancakes are a great breakfast or brunch dish to serve your guests.I've made mini dutch babies using individual metal(not foil) pie pans. This bakes up fluffy and brown on the edges with a moist center.
Ingredients

Pre heat oven to 375F
6 large eggs
1 cup milk
1/4 cup butter
1/4 tsp salt
1 tsp vanilla
1 cup flour
Fresh lemon juice
Powdered sugar
Fresh berries or sliced peaches, warm fruit compote etc

Directions
Step: 1

Place butter in a 9 inch deep dish pie pan and melt in the oven, taking care to not brown butter.While the butter is melting, place eggs, milk, flour,salt and vanilla into a blender and blend until smooth. Batter will be thin.Remove buttered pie plate from the oven and pour the batter in.Return to the oven and bake until puffed and golden brown on the edges, about 25 minutes.
Squeeze a little fresh lemon juice over the center of the pancake and then sift a little powdered sugar over the top. Arrange fruit over the top.

Fruit suggestions depending on the season:Fresh berries such as blue berries, raspberries, strawberries,warm cinnamon apples, (see recipe for fried apples) I think a little creme fraiche or whipped cream would also be great along with the fruit.
