Quick Blender Hollandaise Sauce

Introduction

Many cooks are terrified by hollandaise sauce.This is an all most fool proof recipe, but it should be made just before serving.If more sauce is needed, I would make 2 seperate batches rather than doubling this one.

Ingredients

2 sticks butter
4 large egg yolks
Pinch of cayenne_pepper or to taste
Pinch sea_salt or to taste
1 tablespoon fresh lemon juice
1 tablespoon water
1/2 tsp fresh lemon zest (optional)

 

 

Directions
Step: 1

Melt butter in a small sauce pan, cooking just until bubbles begin to form. Remove from heat. Place egg yolks, lemon juice, water and seasoning in blender. Blend at high speed for 30 seconds. Open top of blender and slowly pour butter in a thin stream.Sauce should be thick and creamy.

I love this method. I was taught this method by a former employer of mine Chef Jeff LaPointe. He use to work for the Chuck Muir corporation and they made their Hollandaise this way. What a quick and EASY way to put together Hollandaise. No more double boiler and whisking your wrist off.
