Italian Style Salad Dressing

Introduction
Ok...since Guido posted in forums about "Italian" salad dressing...I had to post this basic oil and vinegar with variations. I rarely buy bottled dressing, first off because there much more expensive than and not as good as what I make fresh for pennies. It's fun to see what you can create!
Ingredients

3/4 Cup extra_virgin_olive_oil
1/4 Cup balsamic_vinegar
1/4 Teaspoon sea_salt
1/4 Teaspoon freshly ground black pepper


Variations:

Basic Italian Dressing - Replace the balsamic vinegar with red or white wine vinegar.

Herb - Add 1 teaspoon dried oregano , or 2 tablespoon fresh chopped basil or parsley to the basic recipe, or try all 3 herbs and toss in some minced capers ....delicious!

Mustard & Garlic - Add 1 tablespoon dijon mustard , and 1 finely minced garlic clove to the basic recipe.

Cheese - Add 2 tablespoons grated parmesan cheese to the basic recipe.

Raspberry - Use raspeberry vinegar in place of the other vinegars. This is great on salad greens that are topped with toasted walnuts and fresh raspeberries or strawberries.In these variations combine all ingredients in a jar. Close tightly, and shake vigorously.

 

Directions
Step: 1Mix all the ingredients together, and beat lightly with a fork or a whip for a minute. Drizzle on your salad of choice and serve.

If you want a milder flavour of vinegar, you can also use cider vinegar.

Please note: The real Balsamic Vinegar MUST have the word
"TRADIZIONALE" or "TRADITIONAL"
If not, it only normal vinegar added with caramel for the consistency.

Of course, the price is also very very different!
