Beer Batter For Fish

Introduction

This batter is good for firm white fish such as Cod and Pollock, Sole and Mackrel. I also use it for shrimp at times

Ingredients

2 cups all_purpose_flour for batter

1 cup all_purpose_flour for dredging the fish

1 tsp sea_salt
1 tsp baking_powder
1 can beer
1/2 tsp Old_Bays_Seasoning (optional)

This makes enough batter for about 3 pounds of fish.


 

Directions
Step: 1Rinse and pat dry the fish you will be cooking. Have the oil heating before making the batter. Once it's made it needs to be used quickly. Sift flour, salt and baking powder and Old Bays if using together into a bowl. Add enough beer (from a freshly opened can or bottle) to make a smooth medium thick batter. The consistency should be like pancake batter. If the batter is to thin it won't give a good coating on the fish. Dip fish first in flour and then in batter and fry immediately until golden brown. Turn fish pieces gently with tongs or a fish spatula to avoid tearing the coating. Drain on paper towels.
