Introduction

I guess I will have to make these to get a picture of them. I found one on Google and didn't save it, my bad. My daughter always loved to make these when she was little. They look cute arranged around the edges of an easter cake.

Ingredients

4 cups shredded coconut
2 1 lb bags white chocolate_chips
1 bag small jelly beans or other egg shaped candy
Green paste or powdered food color (Wiltom makes this)
2 large cookie sheets lined with waxed paper

Note: Do not use liquid alcohol based food coloring as it will cause the chocolate to bind. If chocolate gets overheated and turns grainy, mix in a tiny bit of solid shortening and stir, adding more until the mixture becomes smooth again.

Directions
Step: 1

In a double boiler over barely simmering water, melt the white chocolate chips.
Add a bit of the food color to make a nice light green. Stir well to combine color evenly.
Add coconut and stir for 1 minute. Remove candy from heat. Drop mixture by spoonfuls onto waxed paper.Press spoon lightly in center to make a nest. Press 3 or 4 jellybeans into the cavity of each nest. Place in refrigerator until completely hardened.

Note, regular chocolate chips can also be used, but omit the food color.
