Introduction

Flan is a delightful Mexican dessert and it's perfect following a spicy or heavy meal.Flan is not nearly as difficult to make as it looks. A pie plate works great as a flan mold, or individual ramekins may be used.

Ingredients

1 quart half_and_half *
1 cup sugar
1 teaspoon vanilla
1/2 teaspoon ground nutmeg or cinnamon , optional
6 eggs, well beaten
Pinch salt

*You can use milk instead of Half&Half if you wish or you may enrich the Half & Half with cream for a richer flan.

For  The Caramel:

Place 1 1/4 cup granulated sugar in a heavy skillet,over low heat.
Stir constantly as sugar begins to melt. When sugar is a pale golden color remove from heat and quickly pour into the mold you are using for your flan. Turn the dish to coat the inside of the mold. Let the caramel harden before pouring in custard mixture.

 

Directions
Step: 1

Preheat oven to 325°. 

Whisk eggs, sugar and salt together. Add half and half, vanilla and nutmeg or cinnamon if using.Pour custard into the carmel lined mold.  Bake in a water bath (see below)  for approximately 45 minutes or until a knife inserted into the center of the flan comes out clean.  Allow to cool, then chill throughly before unmolding. 

To unmold, slide a table knife around the outside rim of the baking dish.  Then, set the bottom of the baking dish in hot water for just a second or more.  Place a large serving plate over the top of the baking dish and invert.  The flan should slide out nicely.          

Water bath: A pan that is large enough to hold the flan mold, filled with enough hot water to come half way up the sides of the flan pan.
