Filets Of Sole In White Wine

Introduction
So many cooks draw a blank on new ways to prepare fish. So they fry it. Now I love fried fish, don't mistake me, but this dish is so elegant yet easy to prepare. The herbs gently flavor the sole. I serve this with lightly sauted green beans dressed with a squeeze of fresh lemon juice and steamed new potatoes with butter and chives.
Ingredients

1 tablespoon butter
4 4-6 oz sole filets
1/2 teaspoon leaf thyme
1/2 teaspoon salt
2 bay leaves, crushed
1/2 teaspoon pepper
1 Tbsp butter
1 scallion , minced
1 1/2 teaspoons flour
1/4 cup butter , melted
2 tablespoons light cream
1/2 cup dry white wine
1 tablespoon chopped parsley 
 
 
 

 
 

Directions
Step: 1Butter well a large baking dish that has a cover. Place filets in baking dish in single layer and sprinkle with salt, pepper, scallion, melted butter, wine, parsley, thyme and bay leaves. Cover baking dish with greased parchament paper, then with dish cover and bake in medium oven (375°F.) 20 minutes. Remove filets from baking dish. Pour juices from baking dish into small saucepan, add butter and let melt. Blend in flour, add cream and cook 2 minutes. Spoon sauce over fish and serve.
