Leek and Portobello Mushroom Soup

Introduction
This is a very simple but elegant soup. Excellent in a multicourse meal, especially with a beef entree.
Ingredients

8 Cups chicken stock (broth)
4 Portobello Mushroom
1 bunch leeks , cleaned and tough part of tops trimmed
1 tblsp butter
Salt and pepper to taste


Directions
Step: 1Bring chicken stock to a simmer, slice mushrooms and leeks. In a soup pot melt the butter and add leeks and mushrooms and lightly saute, about 5 minutes. Add chicken stock and bring to a boil. Turn heat down and simmer for 15 minutes. Add salt and pepper to taste.
