Introduction
It's very easy to cook for one or two people. This is one of my favorite sole recipes. It's simple and delicious.
Ingredients

1 or 2 Sole fillets, 4 to 6 oz
4 to 5 grinds black pepper
2 teaspoons all_purpose_flour
1/8 teaspoon sea_salt
 3 teaspoons butter
1/4 cup sliced almonds
1 teaspoon fresh lemon juice
Lemon wedges and parsley sprigs for serving
 
 

 
 

Directions
Step: 1

In a heavy skillet , heat 1 teaspoon butter until bubbly and hot. Add almonds and sauté until golden. Remove almonds from skillet and set aside.

Step: 2In a small bowl combine flour, salt, and pepper. Dredge fillets in the seasoned flour and set aside. In same skillet heat remaining 2 teaspoons butter over medium heat until bubbly and hot. Add fish and cook until golden brown. Carefully turn fillets over and cook until other side is browned and fish flakes easily when tested with a fork. Remove fish to a warmed serving platter. 

 

Step: 3Reduce heat under skillet to low; add lemon juice and sautéed almonds to skillet and cook over low heat,stirring, until heated. Top fillets with almond mixture; garnish with lemon wedges and parsley.
