Creole Potato Salad

Introduction

This is a hearty potato salad that's full of flavor and goes well with grilled meats. This potato salad should be made the day before it's needed....if it lasts that long!

Ingredients

Dressing
1/2 cup mayonnaise
3 Tbsps extra virgin_olive_oil
1/4 Cup Creole mustard (Zatarian's is good)
1/2 tsp white_pepper
3 Tbsp red_wine_vinegar
1/4 cup minced Italian flat leaf parsley
1/4 cup fresh chives , sliced or "snipped" with kitchen scissors
1 tsp creole_seasoning
1/2 tsp sea_salt
Freshly ground black pepper
1 tsp celery_seed

Salad
3 pounds yukon_gold or red skinned  potatoes
5 hard boiled eggs, peeled and sliced
1/2 cup minced red_onion
1/4 cup diced red bell pepper
1/4 cup diced green bell pepper
1/4 cup sliced green_onions
1/2 cup sliced black olives
1 cup diced celery
1/2 cup diced dill_pickle

 

Directions
Step: 1

Combine dressing ingredients in a bowl and mix well. Cover bowl and refrigerate until needed.

Wash potatoes and remove any eyes or spots. Cut potatoes into \quarters and then halve the quarters and place in a large pan. Cover with just enough cold water to cover. Bring to a boil and cook just until tender. Drain potatoes and place in a large bowl. Combine celery, olives,onion, bell peppers, pickles, pimentos and egg with potatoes. Add dressing to potato mixture while potatoes are still hot. Mix well. Cover and refrigerate. Just before serving, stir salad and adjust salt if needed. Garnish with a sprinkle of paprika or chopped parsley.
