Introduction
This is not an authentic Italian recipe (sorry Guido) but it's really delicious! This dish goes nicely with a very simple salad, perhaps sliced tomatoes dressed with roughly minced basil and olive oil.
Ingredients


I small box Barilla fettuccini , cooked al dente, drained and kept warm.

2 cups half_and_half or light  cream
4 tablespoons butter
Salt and white pepper to taste
3 garlic_cloves , finely chopped
1/4 cup minced fresh basil
1/2 pound button mushrooms thinly sliced.(optional)
1/2 cup dry white wine
1/2 cup fresh shredded Parmesan cheese, plus extra for topping
1/4 cup shredded dry provolone
2 tablespoons freshflat leaf parsley , minced (preferable) Or 1 teaspoon dried

Optional 1 pound (16-20 per pound) cleaned and deveined shrimp , leave tails on. Use any size shrimp but the larger shrimp give a better presentation.

Note: If sauce fails to thicken properly a little Wondra flour may be added.

Directions
Step: 1Gently heat butter in a deep skillet .Add garlic and cook over very low heat until garlic is soft and butter is fragrant.
Add mushrooms and sauté about 5 minutes. Add white wine, and cook unril wine is reduced by half. Add salt and pepper, parsley and cream. Bring to a gentle simmer and cook, stirring constantly, to reduce the mixture, taking care to not  boil  or the cream will curdle. This takes about 5 minutes. Remove from heat and add cheeses stirring to melt .
Mound pasta on a warm serving platter. If there are shrimp, arrange them on top. Garnish with snipped parsley and lemon slices. Pass extra Parmesan. Serves 4 heartily.

Serve a very dry white wine and for dessert , icy cold chunks of melon tossed with a little vanilla syrup.
*If adding shrimp, add them about 3 minutes after simmering of cream begins, until shrimp are pink.

I'd suggest "Greco di Tufo" white wine, or "Galesto" "violet capsule"
