Introduction

This was my Mom's recipe for peanut brittle. We would make it together at Christmas to give as gifts. My oldest sisters kids don't like nuts, so Mom would make a batch of nutless brittle for them.Other types of nuts can be used in this recipe and you can add more nuts if you like.

Ingredients

3 cups granulated_sugar
1 cup water
1/4 cup butter
1/2 cup light corn_syrup
1 cup raw spanish_peanuts
1 tsp baking_soda
1 tsp vanilla_extract

Directions
Step: 1

Generously butter 2 large cookie sheets and 2 large metal spoons.


In a large heavy bottomed pot, combine sugar, water and corn syrup.bring to a boil and cook over medium high heat until mixture spins threads when poured from a metal spoon, or 270 on a candy thometer. Add butter and peanuts. Turn heat down to med low and cook,stirring often until mixture reaches 300. Add baking soda and vanillaand stir to blend. The candy will foam up when the baking soda is added. Immediately pour onto buttered cookie sheets, dividing it between the two sheets.Using 2 buttered spoons, spread the candy to a thin sheet. When hard,crack the brittle with a meat mallet and place into an air tight container to store.

Makes about 3 pounds
