Introduction
I made these for Guido's family the last time I was in Italy. The blue cheese dressing was a challenge because sour cream is not popular in Italy. I made some creme fraiche and it turned out great.
Ingredients

1 cup all_purpose_flour
1 tsp sea_salt
1/2 tsp cayenne_pepper
1/2 tsp paprika
1/2 tsp garlic_powder
1/2 tsp white_pepper
20 to 25 chicken wing segments
1/2 cup butter
1/2 cup hot sauce such as tobasco sauce
Oil for deep frying

Directions
Step: 1

Combine flour, salt, cayenne pepper,paprika, and white  pepper in a bowl. Stir to combine.well. Coat chicken sections in flour mixture and place in refrigerator for 1 hour.

Step: 2Coat sections a second time in the remaining flour after the hour is up.

Combine butter, hot sauce,pepper and garlic powder in a sauce pan and heat just until butter is melted. Keep warm while you cook the wings.

Step: 3

Heat oil in a deep fryer or heavy deep pan to 375 degrees. Fry 8-10 wing sections at a time until golden brown, about 13 minutes. Drain on paper towels. When all pieces are cooked, toss in the butter mixture and remove with a slotted spoon to a greased cookie sheet. Bake wings at 400 degrees for 10 minutes.

Serve wings hot with blue cheese dressing ( recipe in Salads & Dressings section)and celery or carrot sticks.

The recipe as shown produces a medium spicy sauce. To adjust the degree of heat, adjust the hot sauce to butter ratio.

For mild wings use 3/4 cup butter to 1/4 cup hot sauce

For hotter wings use 1/4 cup butter and 3/4 cup hot sauce
