Introduction
Carrot cake is a special dessert and one of my favorites.The recipe calls for one cup of oil, but I use 1/4 cup oil and 3/4 cups unsweetened applesauce. The cake comes out moist and delicious with much less fat and calories. This can also be baked in a sheet or bundt pan, just adjust the baking time a little. When I make this cake, I freeze one layer, unfrosted for later use. I split the remaining layer, fill and frost with the cream cheese frosting. Chopped nuts pressed on the sides makes a nice garnish. Refrigerate the cake after assembly due to the cream cheese icing.
Ingredients

2 cups all_purpose_flour
2 teaspoons baking_powder
1 teaspoon baking_soda
1/2 teaspoon salt
2 teaspoons Cinnamon
1 cup Vegetable_oil *
1 1/2 cups granulated_sugar
4 eggs
3 cups grated carrots ,
1/2 cup raisins
1 small can crushed pineapple ,very well drained
1 cup walnuts , coarsely chopped

Or use 1/4 cup oil and 3/4 cups applesauce*

1 recipe cream cheese frosting

Directions
Step: 1Preheat oven to 325 degrees.
Oil and line two 9" round cake pans  or 1 9X11X2 inch sheet pan with waxed paper. Sift together flour, baking powder, soda, salt, and cinnamon. Take 2/3 of the sugar, add gradually to the oil, beating well after each addition. Beat eggs until light, add remaining sugar. Slowly add egg mixture to oil mixture, continue beating until the mixture is smooth and fluffy.
Step: 2Stir in the pineapple.Gradually stir in the sifted dry ingredients until well combined. Add carrots,nuts and raisins. Mix well. Pour into prepared pans and bake 60-65 minutes, until cakes are golden brown and the tops spring back when lightly touched. Allow cakes to cool for 20 minutes in the pans and then turn out onto wire racks to cool completely. Once cool, spread icing between layers, then ice top and sides. Sprinkle a little orange zesty around top edge.
