Introduction

Prailines are a real southern treat and every good cook in Louisiana has their own recipe it seems.There are many different varieties but this is my favorite. These are fairly easy to make if you are comfortable with a candy thermometer. The beating is the hard part, especially now with my bad right shoulder. I have beaten the mixture in my kitchen aid with the paddle attachement, and added the pecans at the end so as not to break them up to much.This worked pretty well but if you use this method, beat the candy at a very low speed and watch it closely. I use whole pecans because I think it looks nice, but you can chop them roughly if you like.

Ingredients


2 cups granulated_sugar
1 cup evaporated_milk (not sweetened)
1 cup granulated_sugar
2 teaspoons vanilla_extract
2 1/2 cups pecans
2 tablespoons butter

 

Directions
Step: 1

On a large cookie sheet, spread out the pecans and toast in the oven at 325 for about 20 minutes.Line several large cookie sheets with waxed paper. Butter 2 large spoons for dropping the hot candy with.

Step: 2

Place 2 cups sugar and milk in a large heavy bottomed saucepan. Cook over medium to low heat ,stirring often. While the milk mixture is heating, place the 1 cup sugar in a flat bottomed skillet on low heat; stir until melted. Pour the melted sugar slowly into the milk and sugar when it comes to a boil, stir while adding. Cook slowly until a firm ball will form when dropped into cold water (238 degrees F on a candy thermometer).

Step: 3Remove from heat and add vanilla extract, pecans and butter. Beat the candy with a large spoon until it begins to thicken . Drop by spoon fulls on wax paper lined cookie sheets. The pralines should set up immediately.Wrap each praline in plastic wrap and store in an air tight container.
