Serve it with homemade refried beans and you have a great breakfast/brunch that lasts. Type of sauce used can vary depending on how hot you like your food. | | Ingredients | | 12 corn tortillas (Guerrero are our favorite)
1 -2 8 oz cans of your favorite enchilada sauce (El Pato is great, spicy but not too hot!)
6 tablespoons of oil ( I have used corn , canola , vegetable , but canola is my favorite)
Shredded cheese and chopped onions for garnish. | | Directions | | Step: 1 | Break up tortillas into bite sized pieces. In your favorite 10 or 12 inch skillet, warm oil so that you can "fry" the tortillas; You want the tortillas to get a little brown, but more than anything crunchy but not burnt - Once tortillas are crisp (to your liking) add the enchilada sauce and mix together - you can add as much or as little sauce as you like.
Serve with grated cheese (cheddar, monterey jack, queso fresco, etc.) and chopped onions sprinkled on top. | | Nutrition Information | | Don't know the nutritional info, but I do know that my family loves this receipe... |
