Introduction
This is my son's favorite breakfast.  Serve it with homemade refried beans and you have a great breakfast/brunch that lasts.  Type of sauce used can vary depending on how hot you like your food.
Ingredients

 12 corn tortillas (Guerrero are our favorite)
1 -2 8 oz cans of your favorite enchilada sauce (El Pato is great, spicy but not too hot!)
6 tablespoons of oil ( I have used corn , canola , vegetable , but canola is my favorite)
Shredded cheese and chopped onions for garnish.

Directions
Step: 1

Break up tortillas into bite sized pieces. In your favorite 10 or 12 inch skillet, warm oil so that you can "fry" the tortillas;  You want the tortillas to get a little brown, but more than anything crunchy but not burnt - Once tortillas are crisp (to your liking) add the enchilada sauce and mix together - you can add as much or as little sauce as you like.

Serve with grated cheese (cheddar, monterey jack, queso fresco, etc.) and chopped onions sprinkled on top.

Don't know the nutritional info, but I do know that my family loves this receipe...
