My Mom used canned salmon for these usually. These make a nice hot appetizer when made into bite sized cakes. Add some minced capers to the lemon dill butter recipe and serve the cakes with a dab on top to melt. | | Ingredients | | 1 regular size can salmon , drained OR 3 cups flaked cooked firm fish (salmon, mackrel, trout etc) 1 cup well crushed saltine_crackers 1/4 cup minced white onion ORfinely sliced green onion 1/4 tsp black pepper 1/4 tsp sea_salt 1 tbsp grated lemon zest 1/4 cup minced parsley 2 eggs
Oil for frying Flour for dredging
| | Directions | | Step: 1 | Crush crackers in a large bowl. Add fish, salt, pepper and lemon zest and mix well with your fingers, breaking up any large lumps of fish. Add onion, eggs, and parsley. Mix well to combine.
| | Step: 2 | Using about 1/2 cup of mixture, shape into even shaped patties. Dredge patties in flour and place on a plate and refrigerate at least 30 minutes before cooking.
In a large heavy skillet heat oil ( no more that 1/4 inch deep) Add patties and cook over medium heat until evenly browned on each side. Place patties on a paper towel lined plate to drain.
Garnish with lemon wedges to serve. |
