Cheese Stuffed Manicotti

Introduction

I love stuffed pasta, especially when the filling is cheese! I have used the no boil manicotti and the results were pretty good. This is a good make ahead meal, but you may need to add a few minutes to the cooking time to make sure all the filling is hot.
This filling can also be used in a cheese  lasagna. Manicotti is also know as canelloni in some regions.

Ingredients

1 Package manicotti pasta (8-10 tubes)
3 cups of Papa's Pasta Sauce
Or
3 cups Béchamel Sauce

Filling:
1 pound ricotta_cheese
2 Cups shredded mozzerella cheese
4 cups chopped fresh spinach  OR 2 8 oz package frozen chopped spinach (thawed and squeezed dry)
2 large eggs
1/2 cup shredded parmesan cheese
1/4 tsp black pepper
1 tsp salt (to taste)
8-10 fresh chopped basil leaves
I Tbsp minced Italian parsley
1/2 tsp fresh grated nutmeg
Extra grated parmesan for serving

Step: 1


In a skillet, lightly saute the spinach in a little olive oil. let cool.Combine cooled spinach, ricotta,mozzerella,salt and pepper,basil, parsley , parmesan and nutmeg in a large bowl and mix well. Adjust salt if needed to suit your taste. Beat in eggs one at a time.
Cook pasta tubes briefly (6 minutes) in a large pot of well salted boiling water.
Drain pasta tubes and using a small spoon,lightly pack with the filling. Place a thin layer of pasta sauce over the bottom of  a buttered baking dish, large enough to have about 1/2 inch between each tube.Lay the filled tubes over the sauce .Any extra filling can be spread over the filled pasta before adding  the final sauce layer.
Cover tubes with pasta sauce and bake at 350 for 30 minutes.
