To dress this up, offer chopped onion, diced avocado, sour cream, sliced olives and tortilla chips so everyone can top their own serving as they like.
| | Ingredients | | 1 pound lean ground beef or turkey
1 reg size can whole kernel corn
1 envelope taco seasoning
1 cup pitted black_olives , roughly chopped
1 large can diced tomatoe's , undrained
1 large yellow onion , diced
1 (1 lb) can chili with beans
1 (1 lb) can kidney_beans
1/2 tsp ground ground oregano
Salt and pepper to taste
2 tsp chili_powder
1 tsp garlic_powder
1/2 tsp salt or to taste
3 tbsp olive_oil
1 package (2 cups) rotini pasta (or elbow macaroni)
1 1/2 cups shredded cheddar cheese
2 to 21/2 cups lightly crushed tortilla chips
| | Directions | | Step: 1 | Drain juice from everything but the tomatoes and chili.
In a large pot saute onion in oil over medium heat until soft. Add ground beef and cook, breaking up meat until no pink is visible. Add tomatoes ,taco and other seasonings and simmer 10 minutes.
| | Step: 2 | Add remaining ingredients except pasta,and simmer 15 minutes to blend flavors. While the sauce is simmering, bring a large pot of salted water to a boil. Cook pasta till barely al dente. Drain but do not rinse. Add pasta to sauce and mix well. Pour mixture into a large buttered casserole. Bake at 350 for 30 minutes or until hot and bubbly. Sprinkle tortilla chips and cheese over the casserole the last five minutes of baking. | | Menu suggestion | | Chili Mac
