Sesame Snow Peas with Jasmine Rice

Introduction
Jasmine rice has a fragrance and flavor all its own.It smells and tastes a bit like popcorn. Here we add a few more complementary ingredients.
Ingredients

1 tablespoon canola oil
1 cup finely chopped carrots
1/2 teaspoon finely grated gingerroot
1 clove garlic , minced
1-1/2 cups uncooked Jasmine rice
2-1/2 cups water
1 teaspoon salt 1 cup snow peas , trimmed
1 tablespoon lightly toasted sesame seeds
2 tablespoons rice wine vinegar (seasoned if you can find it)
Salt and pepper to taste

Directions
Step: 1In a large saucepan non-stick, heat the oil over medium heat. Add the carrots to the hot oil and stir fry until they start to brown. Add the gingerroot and garlic and stir-fry for 1 minute. Stir in the rice, water, and salt and bring to a boil; reduce the heat, cover, and simmer for 20 minutes. Boil water in a small saucepan. Add the snow peas and cook for about 30 seconds. Then remove to a colander and refresh with cool water. Drain well and cut diagonally into thin slices. Combine with the cooked rice, sesame seeds, and vinegar in a large bowl. Mix well; season with salt and pepper.
