Honey Garlic Shrimp

Introduction
This is a sauce I developed to use on grilled shrimp. It also makes a wonderful glaze for ham or pork. These shrimp make a nice hot appetizer as well as a great dinner. Add to an oriental style salad for a delicious new taste.I usually serve this dish with saffron rice and a crisp green salad or grilled vegetables.
Ingredients

1 cup honey
1/4 cup water
6 large garlic_cloves , peeled and crushed
1/2 tsp cayenne_pepper or to taste
1/8 tsp sea_salt
( Makes about 1 cup of sauce)

2 pounds medium sized shrimp (allow 6 to 8 per person) peeled and de veined with tails on.

Bamboo skewers soaked in cold water. Note: Bamboo skewers will keep the shrimp in place so they don't spin as they will on metal skewers. Cover tips with aluminum foil so they don't burn.

 

Directions
Step: 1

In a heavy saucepan bring the honey and water to a boil. Add garlic, cayenne and salt and cook over medium heat, stirring occasionally for about 20 minutes. I peel the shrimp while the sauce is cooking so I can watch that it doesn't get to dark and develop a burnt taste.Sauce should have a layer of golden bubbles on top that cannot be stirred down. Leftover sauce can be strained and offered as a dipping sauce or stored in the fridge in a glass container up to 2 months.

Step: 2

Thread 4 shrimp on each skewer. Pat the shrimp dry with paper towels and place on a cookie sheet or tray. With a pastry or BBQ brush, coat shrimp lightly on each side with the sauce. Oil BBQ grill to keep shrimp from sticking. Grill shrimp over low to medium coals about 4 minutes per side. Baste lightly with sauce as they cook.

Stay with these as they cook because due to the sugar content in the sauce they will burn quickly.

soooooooooo yum! serve in the summer with a nice potato salad i think, or in the freezing cold english winter with rice and use the left over sauce seived and poured over the rice like a gravy. very nice!!!
