This sauce is wonderful as a dip for crispy tortilla chips or grilled shrimp, over grilled fish or chicken, and is a great addition to guacamole. | | Ingredients | | 1 1/2 lb fresh tomatillos 3 garlic_cloves , unpeeled 1/2 to 3/4 cup fresh cilantro 1 large red onion ,diced 1 tsp sea_salt , or to taste 1/4 cup lime juice
Optional-Fresh seeded serrano chiles. Start with 3 for a milder sauce, add a couple more to suit your taste. | | Directions | | Step: 1 | Preheat broiler. If using fresh tomatillos, remove husks and rinse under warm water to remove stickiness. Broil chiles, garlic, and fresh tomatillos on rack of a broiler pan 1 to 2 inches from heat, turning once, until tomatillos are softened and slightly charred, about 7 minutes.Peel garlic and pull off tops of chiles. Purée tomatillos, chilis and garlic until smooth. Add salt, cilantro,onion and lime juice, stirring to blend.
• Salsa can be made 1 day ahead and chilled, covered. Makes about 3 cups.
