3 Tbsps butter
3 Tbsps flour
2 cups milk
1/8 tsp fresh grated nutmeg or to taste
1/4 tsp white_pepper
3 cups shredded cheddar_cheese
1/8 to 1/4 tsp cayenne_pepper
2 tsp salt
2 eggs, well beaten
1/2 of a one pound box of elbow macaroni (approx)
Note: The cayenne pepper doesn't really make this dish hot, but it gives a nice flavor.
| | Directions | | Step: 1 | In a 2 quart sauce pan, melt butter. Add flour and cook over medium heat for 5 minutes. Add milk and switching to a whisk, wisk until sauce has thickened. Do not allow to boil. Add nutmeg, a pinch of salt and white pepper. | | Step: 2 | Add cheese and stir until melted and smooth.
In a large pot, bring water to a boil. Add 2 tsp salt and macaroni. Cook until al dente. Drain but do not rinse. | | Step: 3 | Add cheese sauce and beaten eggs to the drained macaroni and mix well.
