Razor Clams Au Gratin

Introduction
A easy tasty way to cook the razor clams. Razor clams in Italy are called "cannolicchi"
Ingredients
1 lb razor clams
1 lb cherry tomatoes
1 garlic_clo
1 cup packed fresh parsley
1 cup bread crumbs
1 hot chilli pepper
1/4 cup of white wine
Extra_virgin_olive_oil
Pinch of salt
Directions
Step: 1Wash and open the razor clams, without separing the shells. Finely chop the parsley, garlic, and hot chilli pepper adding a dash of extra virgin olive oil to give it the consistence of a paste, salt to taste and set aside 
Step: 2Preheat the oven at 150°C (300°F) Cut the cherry tomatoes in half. In an oven safe pan, put the razor clams, and the cherry tomatoes (face up), and cover with the paste. Lighty dust with the breadcrumbs. Bake for 5 min and then add thewhite wine and bake for other 5 / 6 minutes. Serve hot and garnish with some more fresh parsley and a drizzle of extra virgin olive oil (optional). Best wine with this dish: Verdicchio delle Marche.
