Introduction

These potato's are a hearty side dish and go great with steaks. A real man pleaser!
These reheat beautifully. Place in a casserole and heat in a hot oven (about 375) until top is slightly brown.Top with cheese if desired.

Ingredients

10 medium sized Yukon_Gold_potatoes
1/4 cup sour_cream
1 Tbsp prepared horseradish
1/8 cup real bacon_bits
1/4 cup butter
1/4 cup fresh minced chives
1 large white_onion , diced fine
Salt and black pepper to taste
1 cup shredded cheddar_cheese


Directions
Step: 1

Scrub potatoes and cut in quarters.
Place potatoes in a large pot and add water just to cover. Bring to a boil and cook until tender. Drain potatoes and leave in the pot to mix.


Step: 2While potatoes are cooking, in a heavy skillet, melt the the butter over medium heat. Add the onion and cook until soft. Add bacon bits and cook about 5 minutes, stirring often.

Add the horserradish, onion and bacon mixture, salt and pepper and sour cream (a little at a time until desired consistency is reached) to the hot cooked  potatoes.
Mix well with a wooden spoon, breaking up some of the potatoes as you mix. This gives a chunky/creamy consistency. For smoother results us an old fashioned potato masher.
Stir in the chives and cheese, pile into a heated bowl and serve!
