Introduction
These are so good and garlicy! They make a great side dish with roast beef or meat loaf.
Ingredients


8 to 10 cloves garlic
1 1/2 pounds russet potatoes
1/3 cup sour cream
2 Tblsp butter
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup fresh minced parsley (reserve a bit for garnish)





Directions
Step: 1Scrub and peel potatoes. Cut into med sized chunks.In a small sauce pan over low heat, melt butter.Add peeled garlic cloves and cook, stirring occasionally until cloves are very soft and slightly golden brown. Alternately the garlic can be roasted. Wrap peeled garlic cloves and butter in foil, making a slight cup shape to hold the garlicky butter. Bake in a 400 degree F. oven for 25 to 35 minutes or until cloves are soft. Bolth of these methods can be done in advance.
Step: 2Meanwhile In a large pot cook potatoes in a small amount of boiling water (just enough to cover)for 20 to 25 minutes or until tender. Drain and return to pot. Add garlic and the garlic butter to potatoes.
Mash potatoes and garlic with a potato masher. Add sour cream, parsley salt and pepper.Mix well. Pile potatoes in a heated ceramic bowl and sprinkle with reserved parsley.
