Introduction

This is a super cool pie to serve your family and friends on a warm spring evening. I usually double the glaze recipe because I like to really pile the fruit high.
This recipe was given to me by the Mother of my former neighbor. Everyone called Helen YaYa,and she was a wonderful cook. Sadly I've lost touch with my neighbor over the years. But I have my memories.This is a great crust if your not experienced in pie crust making, but you can use any crust you like, even a ready made graham cracker crust. You can make any type of pie you want with this, just match the Jello flavor with the fruit. I love fresh white peaches with peach Jello!

Ingredients

No Roll Pie Crust
1 1/2 cups all_purpose_flour
1 1/2 Tbsps granulated_sugar
1/2 cup vegetable_oil
3 Tbsp milk

Glaze
1 cup granulated_sugar
2 Tbsp cornstarch
Pinch of salt (less than 1/8 tsp)
1 tsp vanilla_extract
1 small pkg strawberry Jello
1 3/4 cups cold water

Directions
Step: 1

Wash and hull the berries and place them on a towel to dry. If they are too big you can cut them in half. I save a really nice berry to top the pie.

For the crust: Sift dry ingredients into a bowl. In a seperate bowl, with a fork beat shortening and milk together until creamy.
Pour milk and oil mixture into the flour mixture. Mix throughly. Turn into a pie plate and press the dough evenly over the bottom and up the sides with the back of a spoon or your fingers. Prick sides and bottom with a fork. Bake at 410 degrees F for 8-10 minutes.


Step: 2For the glaze:In a saucepan, mix sugar, salt and cornstarch until evenly blended.Add water and stir well. Cook over medium high heat, stirring often,until clear and thickened. Remove from heat and add the jello and vanilla, stirring well to dissolve the jello. Cool until the mixture begins to thicken up. Place berries in a large bowl and pour glaze over, stirring gently to coat all the berries.With a slotted spoon, spoon berries evenly into pie shell, add more of the glaze if you wish. Chill until firm,about 1 hour.Top with sweetened whipped cream. Store leftover pie in the refrigerator, if there's any left!

Nectarines with peach Jello
Sliced strawberries and bananas with strawberro Jello.
