8 ounces chopped chocolate 1 cup heavy cream 4 Tbsp butter
| | Directions | | Step: 1 | In a double boiler or a ban marie over medium heat, heat the cream. Add the chocolate and stir until smooth.Add the butter and stir until completely combined.Be careful to not over heat the mixture or it can bind and become grainy.Remove mixture from double boiler and cool slightly before pouring over the cake.Place cake to be iced on a cooling rack placed over a large bowl or a cookie sheet with sides.Starting in the middle of the cake, slowly pour the ganache over the cake, working in a spiral motion.The ganache will spread out and over the sides of the cake.And areas that are not covered can be touched up with a spatula while the ganache is still warm.
The ganache that is caught in the drip pan can be re used if there are no crumbs in it. Reheat over warm water, stirring constantly until smooth.Refrigerate leftover ganache. |
