The pie had a flakey crust like a baked pie, and the filling was ground pork and hamburger with savory and I believe a minced potatoe. It was very moist and had a top crust. It was the best Pork Pie I have ever tasted and my family loved it, have not been able to reproduce. This recipe was very old, anyone have one?
Tourtiere-Quebec Meat Pie My former Mom In law always made this for Christmas morning breakfast as was tradition in her family. Helen's Mother came from Quebec and this was her Mothers recipe.I hope this is what your looking for Debbie. 1 lb lean ground pork. Half ground turkey or ground beef can be used if you wish 1/2 cup water 2 medium potatoes 1 clove_garlic, finely minced 1/2 tsp thyme 1/4 tsp allspice 1/2 tsp ground_sage 1 tsp salt 1/8 tsp ground_cloves 1/4 tsp dry_mustard 1 egg 1 tsp water Pastry for 2 crust pie | | Directions | | Step: 1 | Combine ground pork,the 1/2 cup water, garlic,salt, thyme,sage, mustard and cloves. Heat a large skillet over high heat and add the meat mixture. Saute until the pork is completely cooked.While the pork is cooking, peel and dice the potatoes.Cook in just enough salted water to cover.When tender, drain the potatoes and add to the meat mixture.Mix well. Cool the filling before placing in the pie shell.
| | Step: 2 | Line a 9 inch pie plate with crust.Add cooled filling and spread out evenly. Place top crust on and flute edges.Cut slits in top crust to vent steam.Beat the egg and 1 tsp water and brush over the pie. Bake at 375 F for 45 minutes or until top is golden brown. Note: if using a glass pie plate, place it on a cookie sheet for a more evenly browned bottom crust. |
