Introduction
This dish originates in the Italian town of Siena in Tuscany. It is traditionally served with pork liver, but goes with a variety of boiled or braised meat dishes. Or you can add some mild Italian sausages when you add the beans. Simmer till they are cooked through for an Italian version of beans and weenies.
Ingredients
3 tablespoon extra_virgin_olive_oil
3 garlic_cloves
1 tablespoon fresh chopped sage leaves, or 1 teaspoon dried
1 can peeled tomatoes
2 cups dried cannellini_beans
Fresh ground black pepper
Sea_salt
Directions
Step: 1Soak the beans for 12 hours or overnight. Drain and rinse the beans. Place the soaked beans in a largpot. Add water to cover the beans.Add salt to taste and bring to a boil.Boil the beans until tender but take care to not overcook.When beans are done, heat oil in a skillet or saucepan over medium high heat. Add garlic and sage and sauté just till garlic begins to brown. Add tomatoes and simmer over medium heat for about 10 minutes. Stir in beans, adjust salt and pepper. Simmer another 10-15 minutes over low heat. Serve.
