1/4 cup butter 1/4 cup all_purpouse_flour 3 Tbsps minced fresh chives 3 Tbsps minced fresh parsley 1 tsp onion_powder 1 quart chicken_stock or broth 1 Quart half and half Sea salt and freshly ground black_pepper 3 large shallots , sliced 6 large yukon_gold_potatoes , peeled and diced.
| | Directions | | Step: 1 | In a large pot, bring chicken stock to a boil. Add potatoes, turn down heat and simmer until almost tender but still firm.In another large pot, melt the butter over medium heat. Add the shallots and cook until soft. Add the flour and cook, stirring constantly,about 5 minutes.Add the half and half and stir until smooth. Add the potatoes and the cooking liquid to the cream mixture.Add salt and pepper to taste. Add the onion powder and chives. Simmer on low heat until the potatoes are tender.Add the parsley and serve. |
