Corn Chowder

Introduction

This is a great cold weather soup, served with crusty bread and a green salad. It makes a very satisfying meal.

 

Ingredients

1 ½ large bags frozen corn (approx 8 cups)  
2 medium onions , finely chopped
1 medium carrot finely chopped   
1 teaspoon sugar
1 quart Half and Half     
3 cups whole milk
1 teaspoon onion powder    
Salt and pepper to taste
¼ cup flour 
1 cube butter

Directions
Step: 1

In large pot, melt half the butter over medium heat.Add the flour,onions and carrots and  cook until onion is soft,stirring constantly. The flour will begin to brown a little, this is ok.
Add the frozen corn and cook for about 5 minutes, stirring comstantly.
Add milk, half and half, remaining butter and seasonings and cook about 15 minutes. The chowder will thicken as it cooks, if too thick for your taste, add a little more milk and adjust seasonings.
