Introduction
The Vietnamese diet would not be complete without sweets. With the abundance of produce in the tropical south, it is no surprise that fruit finds its way into many of these dishes. This recipe is evidence of the country's constant use of sugar, lime juice, ginger and various fruits.
Ingredients
1/2 cup shredded unsweetened coconut
3 teaspoons sesame seed
1/4 cup unsalted butter
1 teaspoon grated ginger root
Zest of 1 orange
6 small and not very ripe bananas (not miniature)
1/2 cup granulated sugar
4 tablespoons fresh lime juice
Slices of lime or orange for decoration
Vanilla ice cream
Directions
Step: 1In a 350-degree oven, roast the shredded coconut on a non stick cooking sheet until lightly browned. Roast the sesame seeds until golden brown. Remove the pan, and allow to cool. Heat the butter in a large frying pan, then add the ginger and the orange zest, and mix well. Slice the bananas in half length-wise and carefully add them to the mixture, turning the banana slices so they are totally coated with butter. Cook until the mixture thickens. Serve with vanilla ice cream. Sprinkle with the toasted coconut and sesame seeds on top. Decorate with slices of lime or orange.
