Ingredients

2 pounds calamari , cleaned and sliced into 1/2 inch rings
(if buying already cleaned and sliced, 1 to 1 1/2 pounds)
2 cups flour
2 eggs
1 Tbsp water
1/4 tsp sea_salt
1/2 tsp ground oregano
2 tsps cajun_seasoning
1/2 tsp white_pepper
1 tsp garlic powder
1 tsp onion_powder
vegetable oil for frying


 

Directions
Step: 1Prepare calamari by removing tenticles.You only want the body tube for this dish.If buying already sliced, rinse and drain well.Beat eggs with water and set aside.Combine flour and all seasonings in a large bowl. Heat about 2 inches of oil in a heavy deep pan.Oil is ready when a bread cube dropped in begings to sizzle immediately (375 degrees on a fat thermometer).Dip calamari first in the egg wash and then in the seasoned flour. Fry rings a few at a time until golden brown, about 2 min on each side.Place fried rings on a paper towel line platter to drain.Serve hot with your favorite dipping sauce.
