Vanilla Sugar Cookies

Introduction

My Dad loved sugar cookies...and I have to agree. These are light and crisp, buttery and melt in your mouth. I urge you to use the vanilla bean, the flavor just explodes in your mouth. Store these cookies in an air tight container.

Ingredients

1/2 cup unsalted butter (preferably)
1/4 cup vegetable_shortening
1 cup granulated_sugar
1 vanilla_bean split and seeds scrapped -OR- 2 tsps vanilla_extract
2 1/2 cups all_purpose_flour
1 tsp baking_soda
1 tsp salt
1/2 tsp fresh lemon zest (optional)
Note: Depending on where you live,the humidity and elevation, you may need to add 2 tsps of water to the dough to make it easier to keep together and roll out. I live near the ocean and it's fairly humid here.

Directions
Step: 1

Combine shortening, sugar, butter and vanilla bean scrappings in a large mixing bowl.
Cream well, until sugar is dissolved (take a bit of the butter mixture and rub between your fingers, it should be smooth and not gritty.
Sift together flour,baking soda and salt.Add zest to flour mixture if using.
Blend flour mixture with butter mixture, taking care to not over mix.
Wrap dough in plastic wrap and chill one hour.
Heat oven to 400 F. Roll dough out 1/8 inch thick on a lightly floured surface.Cut with your choice of cookie cutter.Place cookies onto an ungreased baking sheet, about 1/2 inch apart. Using a pastry brush,brush the top of each cookie slightly with water and sprinkle a little sugar on top.Bake 6 to 8 minutes until cookies are a delicate golden brown.

A friend brought to my attention that I wrote baking powder instead of baking soda in the directions of this recipe.Baking soda is listed in the ingredients and that is correct.
