Introduction

My Mom always made this at Thanksgiving. It's a recipe she got from her sister, my Aunt Francis. It's tart and sweet and crunchy, great with roast turkey or pork. This side dish also packs a great nutritional whallop, and looks really pretty on the table!

Ingredients


 

1 small box cranberry or black cherry jello
1 cup boiling water
1/2 cup ice water
1/2 cup granulated_sugar (or to taste)
1 small can crushed pineapple , drained
1 1/2 cup chopped fresh cranberries (use a food processor for this)
1/2 cup finely diced celery
1/4 cup rough chopped pecans or walnuts
1 medium apple, cored and diced (peeled is a matter of preference)

Directions
Step: 1

In a large glass or metal bow, combine dry jello and sugar. Add boiling water and stir until jello and sugar are completely dissolved. 

Step: 2Add ice water and stir.
Chill until jello is just starting to thicken. Fold in remaining ingredients. Pour mixture into an attractive glass serving dish, cover and chill until firm.
