Introduction

My Mom discovered this recipe in the early 70's and it became a family favorite.I like to make it at Thanksgiving because it goes so well with turkey or ham.
Kids love it!

Ingredients

1 1 pound can cream_style_corn
1 1 pound can whole kernel corn (drained)
1/4 cup finely diced onion
1/4 cup finely diced celery
1 small jar diced  pimentoes (optional but pretty) drained
1 1/4 cup whole milk
1/4 tsp white_pepper
1/4 tsp salt
1/8 tsp poultry_seasoning
1/4 cup chopped parsley
2 cups crushed saltine crackers
2 Tbsp butter + 4 small pieces for topping

Directions
Step: 1

Butter a 1 1/2 quart casserole and set aside.Preheat oven to 325 degrees F.

In a skillet, melt the butter. Add the onion and celery and saute over low heat until onion is translucent.Set aside to cool.
In a large bowl, combine corn, pimentoes, milk,parsley,celery,onion ,salt and pepper and poultry seasoning.Blend well.Add crushed crackers and mix well. Pour into prepared baking dish and dot top with small pieces of butter.
Bake in a 325 degree oven for about 45 minutes, until puffed and golden.
Makes 4-6 generous servings.
