Introduction
I make this weeks before Thanksgiving and freeze it. That way I have plenty for my stuffing and gravy.
Ingredients

4 pounds turkey necks and wings
3 large carrots cut in chunks
3 large onions , unpeeled, quartered
4 stalks of celery cut in 3 pieces


 

Directions
Step: 1Pre heat oven to 425.Place necks and wings in a large shallow roasting pan.
Roast for 30 minutes, stirring occasionally. After the 30 minutes add onion pieces and roast another 30-45 minutes,stirring occasionally, until meat is very brown and onions are carmelized.

Place turkey pieces, onions, celery and carrots in a large pot. Add enough water to cover.Bring to a boil, then turn down to a simmer. Meanwhile add a little water to the roasting pan and bring to a boil, scrapping up any brown bits. Add this liquid to the stock pot.Simmer stock for 1 to 1 1/2 hours, uncovered.Cool slightly and then strain through a mesh strainer. Pour into freezer containers and freeze until needed.Discard turkey pieces and vegetables.
