This is a very easy soup, but can be also a nice side dish for chicken, pork or veal. | | Ingredients | | 1/2 lb italian lentils (castelluccio's lentils are great) 3 cups broth (chicken, beef, veg) 1/2 onion finely sliced 1 scallion finely sliced 1 tbs extra virgin olive oil 2 tbs half and half salt to taste red hot chili pepper flakes to taste | | Directions | | Step: 1 | Soak the lentils overnight and discard all the floating ones. Rinse, drain, and put the lentils in the broth and simmer for one hour. Meanwhile, in a frying pan sautee the onoin and the scallion until translucent. Add salt and pepper flakes according to your taste, remove from heat and add the half and half. Stir gently, add the mixture to the lentils and serve. |
