Rabbit casserole

Introduction
This is a traditional recipe from Tuscany, very easy but still very tasty.
Ingredients
1 rabbit
1/4 lb pancetta finely diced
1/4 cup flour
2 tbs butter
2 tbs extra virgin olive oil
1/2 lb ripe juicy tomatoes (roma's or other tomatoes for sauces) peeled deseeded and diced
1 onion chopped
1 garlic clove
1/2 cup white wine
few sage leafs
few rosemary leafs
salt and pepper to taste
Directions
Step: 1Cut the rabbit in pieces, wash, dry, add salt and pepper and dredge with flour. In a large casserole, melt the butter, add the oil, garlic, the pancetta and cook until golden. Add the rabbit. sage, and rosemary and let it brown on low heat about 10 minutes. Add the onion and the the white wine, and let it evaporate. when done, add the tomatoes and let it cook for about 45 minutes.
