Originally Ratatouille was a poor farmer’s dish only prepared in summer with "summer vegetables". Ratatouille should never be mushy. The vegetables should be cooked separately to keep them from getting waterlogged, but we are for "quick and Easy" so we will use a faster and less messy method, without loosing any of the original flavour. In winter fresh tomatoes are generally tasteless so replace them with a can of chopped tomatoes. | | Ingredients | | 2 Zucchini 2 eggplant's (see note) 7 Tomatoes 3 Each Green & Red Bell_Peppers 1 Onion 2 garlic_cloves (crushed) Extra virgin_olive_oil Salt & Pepper Herbs de provence (basil,thyme , parsley)
| | Directions | | Step: 1 | Peel and drain the tomatoes . To peel the tomatoes easily, place them in boiling water for one minute, then place in a bowl of ice water. . Make a cut with a knife on the top: peel should come off easily.
| | Step: 2 | Chop the onion and garlic. Clean the bell pepper, remove stalks and seeds, cut into small strips. In a large cooking pot with thick bottom, put in extra virgin olive oil, onions and chopped garlic. Add the bell pepper. Cook uncovered for 20 minutes, stiring frequently.
| | Step: 3 | Add the peeled tomatoes and herbs de Provence. Stir well and cook for another 15 minutes. Cut the eggplant into bite sized pieces. Cut the un-peeled zucchini into 1/4" thick round (slices). Add the eggplant and zucchini to the pot. Cook for about 30 minutes.
Serve warm, as a main course or with meat or fish. This dish can also be served cold and is especially nice in summer.
Note: eggplants are never used in the real "Ratatouille Niçoise" which is an old authentic recipe from around Nice. you can use more zucchini instead.
A Rosè from Provence served cold (10°C /50°F) is the ideal wine for this meal. |
