Thai Chicken Satay

Introduction
This recipe comes from Mikel, a new member. it's simply delicious! I served mini skewers as an appetizer at a party last summer and they went fast!
Ingredients

2 Lbs. chicken breasts, cut into 1" strips
Sm. bamboo satay sticks , soaked in cold water for 10 minutes

Marinade:
2 garlic_cloves
1 tbsp. curry_powder
1 tbsp. coriander powder
1 tsp. salt
1 tsp. butter
3 tbsp. light cream
1/2 c. coconut_milk

Sauce:
1 tbsp. granulated_sugar
2 tbsp. peanut_butter
1 1/2 c. coconut_milk or cream
1 tsp. lemon juice
1/2 tbsp. curry_powder
Dash of chili hot sauce (tabasco works good)

 

Directions
Step: 1

Mix marinade ingredients. Add chicken to mixture. Marinate at least 2 hrs.

 

Step: 2Thread chicken pieces on one end of satay sticks. Broil or, much better, barbecue. Baste with marinade. Serve with peanut sauce for dipping.

Sauce: Mix ingredients together. Should have a sweet/hot peanut taste.
