Scalloped Potatoes

Introduction

With all the package mixes available, many people forget how easy dishes like this can be, and how much better.I can make a pan of these potatoes almost as fast as I can make the box mix.

 

Ingredients

4 large (about 2 pounds) baking potatoes , scrubbed and sliced thin. Peeled is a matter of preference.
2 Tbsps all purpose flour
Softened butter
Salt and freshly ground black pepper
2 cups whole milk
1/4 cup minced fresh parsley (or 2 tsps dried)
1 large yellow onion , peeled and sliced thin (optional)
1/4 cup snipped fresh chives (optional)


 Note: New potatoes are not starchy enough to make a nice sauce so they will result in a runny dish.

Directions
Step: 1

Preheat oven to 375 degrees.Butter a  3 inch deep casserole. Arrange potatoes and onion if using,in layers, in casserole dish. Sprinkle salt and pepper on each layer. Combine cold milk and flour, mixing well to work out any lumps.Pour milk over potatoes. Place small dabs of butter over potatoes.Sprinkle with parsley and chives if using. Place casserole in the center of the oven and bake until potatoes are tender and sauce is bubbly.

Note: For busy cooks, prepare the potatoes in advance and place in a bowl of salted water in the fridge until ready to use.

Add 2 to 3 cups cubed cooked ham to make a main dish casserole.
